We take nutrition seriously and strive to provide our students many options for flavorful and nutritionally balanced meals.
A menu committee, consisting of Food Services staff members and our corporate executive chef, continually evaluates menu selections for their appearance, taste, nutritional value, and selling appeal. The committee also considers the logistics of offering the item. Nutritional information about all the menu items is available upon request.
Food Allergies and Intolerances
If you're a Penn State student living with a medically diagnosed food allergy or intolerance, you're not alone. Helpful nutrition information is displayed in the dining commons. Entree cards are supplied for each item served in the dining commons, complete with nutritional information about the food item, as well as allergen information. A dietitian screens each recipe for five allergens: milk, wheat gluten, nuts, fish, and eggs. Allergy icons on entree cards are displayed based on recipe ingredients. You need to be aware, though, that cross-contamination with other allergens is possible since the facility receives other foods containing allergens that may not be noted on the entree cards.
Our bakery items are produced on equipment that also produces foods containing peanuts, tree nuts, seeds, dairy items, and/or dried egg powder.
Some products from the Berkey Creamery (which supplies dairy products to the dining commons) contain nuts, and inadvertent cross-contamination is possible.
We offer many gluten-free options in our facilities to accommodate the special dietary needs of students and guests with celiac disease. Common sources of gluten are breads, cereals, desserts, pasta, sauces, salad dressings, and soups. Since many common foods contain gluten it can be frustrating to find comparable alternatives. Many manufacturers are starting to introduce gluten-free items in response to consumer requests. Penn State is purchasing gluten-free products from three manufacturers: Bob's Red Mill, Rich's, and French Meadow Bakery.
Gluten-free options are available daily at Stacks Market for breakfast, lunch, and dinner:
- Gluten-free rolls (to make breakfast sandwiches)
- Lunch & Dinner
- Soup du jour
- Hamburgers and cheeseburgers
- Gluten-free bun
- Gluten-free pasta with homemade tomato sauce
- Grilled chicken breast
- Gluten-free cheese pizza
- Gluten-free chocolate chip cookies
- Gluten-free brownies
These menu options are available by request only. When you arrive at the dining commons, let an employee know that you'd like to see a manager, and then you can tell them what you would like for your meal. You can also call ahead to alert the food preparers and decrease your wait time.
